Whew!

I'm glad the 4th is well over with. I cheated just a tiny bit and had some comfort foods lol But I'm at 276 lbs which means I'm down another 1 lb, still on track! Ive been incredibly busy the last few days. Doctor appointments, getting things done around the house, working on insurance junk for my hubby. Some days I don't know how Ill get through it but somehow I do.

Anyway, I came across an "oopsie" recipe and I tried it out on my family. It was a big hit! So much so that my hubby has told me its the only bread he wants to have from now on for sandwiches.  I didn't quite follow the recipe, so Ill give you the one I used. 1 8 oz box of cream cheese (full fat) 3 eggs (separated from yolk but don't throw out) a pinch of baking powder (next time I'm going to use 1t.) The original recipe called for the cream cheese to be cold out of the fridge but next time I'm letting it warm up to room temp. I blended the cream cheese with the 3 egg yolks and the baking powder and set it aside. Then I whipped the egg whites until they were super stiff where you could turn the bowl upside down and shake and it wouldn't come out. Then gently folded the cream cheese mixture into the egg whites until it was blended together. I preheated the oven to 375 degrees. You can be as creative as you want, but I just made round bread slice size portions about 1/4 inch thick. I baked it for about 25 minutes give or take. Until it was golden brown. Its tough enough to hold up to a sandwich or burger and doesn't taste like eggs. And the best part, NO carbs!

I made a pizza with it one night, spread it into a glass baking dish then baked it until golden brown then spread Newman's Own marinara sauce and topped with pepperoni and mozzarella cheese and baked it until the top was nice melted and golden on the edges. YUMMY! Also no carbs! Now when I made the pizza though, the crust was wet, but not soggy. In other words, it had moisture from the greases from the cheese and pepperoni but it still held together and it was even better reheated the next day in the oven. The only thing I think I might change would be that I would try making it on a metal cookie or pizza sheet next time. Although the glass dish worked fine too.

Other than that, I'm just making it day by day, trying to eat healthier, trying to stay positive and trying to get little bits of exercise too. Its been a long day and I'm ready to hit the bed, so with this, Ill bid you a good night! :o)
